You guys asked for holiday cookies that are KETO friendly. These cookies are easy to make and extremely delicious. I'm using monkfruit extract for the sweetener. Substitute any sweetener you prefer. In a food processor, combine all ingredients and pulse. Roll into a ball or log and wrap in plastic wrap. Refrigerate for at least 30 minutes. 2. Preheat oven to 350F. Cut dough into two sections and re-wrap half and refrigerate. Roll out remaining dough to desired thickness between sheets of wax paper. Cut into shapes with cookie cutter. Place on lined baking sheet and bake for 12-15 minutes or until golden brown. Allow to cool completely before transferring to a wire rack. 3. Combine glaze ingredients to desired consistency. Ice cookies as desired. Store cookies in refrigerator or freezer. Recipe makes approximately 3 dozen small cookies. Enjoy!
