How to make dhaaba style potato gravy or curry is an authentic dish must in an Indian household....its loved by kids and elders...and is famous among vegetarian Indian dishes..best enjoyed with chapati or phulka...can also be eaten with rice.
INGREDIENTS

Potatoes -- 1/2 kg cut and boiled
Onion -- two big cut and grinded
Tomatoes -- 2 big cut and grinded
Oil -- 3 tablespoons
Ginger garlic paste -- 1 teaspoon
Curry leaves -- few
Cumin seeds -- few
Mustard seeds -- few
Red chilli powder -- 1 teaspoon
Turmeric powder -- 1/4 teaspoon
Coriander powder -- 1 teaspoon
Cumin powder -- 1 teaspoon
Garam masala -- 1 teaspoon
Water -- 1/2 cup
Green chillies -- 2 to 3 slit open and cut
Coriander leaves -- few
Salt -- as per taste
METHOD

1.Cut potatoes into small cubes, boil them and keep aside.
2.Heat oil in a pan and add curry leaves,cumin seeds and mustard seeds...let it splutter.
3.Then add ginger and garlic paste and fry till raw smell disappears
4.Add the grinded onion paste and saute for some time till onion changes its colour.
5.Add tomato puree and fry well.
6.Add all the masalas...i.e red chilli powder,turmeric powder,coriander powder,cumin powder,garam masala...also add salt...fry it well.
7.Add boiled potatoes and mix well.
8.Add green chillies and coriander leaves.
9.Mix well and add half a cup of water.
10.Mix well and simmer for 5 to 10 minutes.
11.Dhaaba style potato gravy is ready to serve...can be enjoyed with roti or phulka.
